Autumn Apple, Ham and Goat Cheese Salad

INGREDIENTS
- 1 Coleman Natural ham steak
- 3 5-oz bags spring mix salad greens
- 3 Gala apples, cored and thinly sliced
- 1 cup pomegranate seeds
- 1 cup walnut pieces
- 1/2 of a small red onion, thinly sliced, halved and separated into pieces
- 2/3 to 3/4 cup balsamic vinaigrette
- 1/3 cup goat cheese crumbles
Tip
Feel free to replace pomegranate seeds with dried cranberries and if you can find candied walnuts instead of regular, they add a nice sweet kick!
INSTRUCTIONS
1 Combine salad greens, apples, pomegranate seeds, walnuts and onion in very large salad bowl.
2 Pour vinaigrette over mixture; gently toss until lightly coated.
3 Spoon salad mixture onto individual salad plates.
4 Top with ham; sprinkle with goat cheese.
5 Serve immediately
