Gyro-Style Pork Sandwich

Gyros-style pork sandwich

Favorite flavors of the Mediterranean come alive in this gyros-inspired sandwich. Marinated strips of pork roast quickly in a hot oven and are then tucked into a pita pocket and topped with a yogurt-cucumber dressing.

Gyros-Style Pork Sandwich
Ingredients
  1. 1 pound Prairie Grove Farms Boneless Pork Loin
  2. 4 tablespoons olive oil
  3. 1 tablespoon Dijon-style mustard
  4. 1/2 cup lemon juice
  5. 2 garlic cloves, crushed
  6. 1 teaspoon oregano
  7. 1 cup plain low fat yogurt
  8. 1 cucumber, peeled, seeded and chopped
  9. 1/2 teaspoon garlic pepper
  10. 1/2 teaspoon dill
  11. 2 pita loaves, halved
  12. 1/2 small red onion, thinly sliced
Instructions
  1. Cut pork crosswise into think slices; then into strips 5×1/2-inch.
  2. Place in self-sealing bag.
  3. Combine olive oil, mustard, lemon juice, garlic and oregano; pour over pork.
  4. Cover and refrigerate 1-8 hours.
  5. Meanwhile, in small bowl stir together yogurt, cucumber, pepper and dill. Cover and refrigerate.
  6. Heat oven to 450 degrees F.
  7. Drain marinade from pork, discarding marinade.
  8. Place pork in single layer in shallow pan.
  9. Roast until crisp, about 10 minutes.
  10. Open each pita half to form a pocket.
  11. Distribute pork among each half.
  12. Top each sandwich with some yogurt dressing and onions.
